Ingredients

​Yeast Activator

  • 175ml warm Water

  • 120 grams All-purpose Flour

  • Tablespoon dry Yeast

  • 10 grams Sugar

Dough

  • 180 grams All-purpose Flour 

  • 75ml Olive Oil

  • 2  Tablespoons Rosemary dry/fresh

  • Tablespoon Salt

Filling

  • 250g shredded Mozzarella

Egg wash & Garlic Butter

  • 1 Egg whisked

  • Tablespoon Water

  • 50 grams Butter melted

  • Teaspoon Garlic Powder

  • 1 Teaspoon Parsley dry/fresh

  • ½ Teaspoon Salt

1. Yeast Activator and Dough

1. Add your water to a measuring cup. Now combine it with your yeast, sugar and flour. Cover this mixture with a towel and let it sit for 15 minutes. 

2. In a bowl, combine flour, salt, rosemary and olive oil. After combined, add your yeast mixture. Combine everything together until you get a rough dough. Make sure to not over-mix your dough since it would get dull.

3. Knead your sticky dough until it becomes smooth for 10 minutes. Add a bit flour if it is still sticky after kneading.

4. Now cover your bowl with a towel and let your dough rest for 30 minutes. 

2. Shape and roll

1. Place your double-in sized dough on a floured flat surface. Roll your dough like a stick. 

2. Now cut your dough into 13 pieces and roll them each to a ball. 

3. Roll your dough balls slightly out to a circle and put mozzarella into the center of each dough ball. Now pinch the edges together to get back to the origin ball-form and to seal the edges. Make sure to not roll your dough balls out too thinly. You can also just pinch in a hole into the ball to put the mozzarella in. 

4. Preheat your oven to 180°C.

3. Egg wash and assemble

1. Whisk your egg and water together to create an egg wash.

2. Add your dough balls into your baking dish. If you want to try out the turtle shape, you start with a middle piece and put 5 other dough balls around it. after that, you put the rest of your dough balls on top between two dough balls. Usually there is one dough ball left, which you can use to make the head of the turtle.

3. Now brush your turtle bread with the egg wash and bake for 30 minutes.

4. Garlic Butter

1. While we let the magic happen in the oven, we prep the garlic butter.

2. In a bowl, add your melted butter, garlic powder, parsley and salt. Mix everything together until you get a buttery mixture.

3. Set aside to spread your garlic butter on the bread turtle later.​​

 

4. Let your bread turtle cool down for 5 minutes. If you're impatient, you can go right ahead with the next step. 

5. Brush the garlic butter over your bread turtle.
