Fried Apple Slices

Ingredients

Apples with fried Batter

  • 2 mid-sized Apples

  • Teaspoon Butter melted 

  • Eggs yolks and whites separated

  • 180 grams All-purpose Flour

  • Teaspoon Salt

  • 1 Teaspoon Vanilla Extract

  • 20 grams Sugar

  • 180ml Sparkling Water or Beer

Vanilla Sauce

  • 1 Vanilla Bean Pulp extracted

  • 500ml Milk

  • 20 grams Sugar

  • Tablespoon Starch

  • 4 Egg yolks whisked

Topping

  • 50 grams Sugar

  • Tablespoon Cinnamon Powder

1. Batter

1. In a bowl, combine the egg yolks with flour, sugar, salt butter and the sparkling water or beer.

2. In another bowl, whisk your egg whites until stiff.

3. Now add your egg whites to your batter and fold it gently into the batter.

2. Vanilla Sauce

1. Put about 450ml of your milk into a pan with your hollow vanilla bean and sugar. Put your pan on a stove on medium heat and let it simmer.

2. In a bowl, add the remaining 50ml of your milk, egg yolks, (extracted) vanilla bean and your starch. Mix everything together until you get a smooth consitency.

3. Now add your mixture to the pan and whisk everything gently while simmering. After everything dissolved, take the pan off the stove and let it cool down. Remove the hollow vanilla bean.

4. Put your vanilla sauce aside to serve later with the fried apple slices.

3. Prep and cook

1. Peel your apples and cut them into 1cm thick slices. remove the pips and the middle part of your apple slices with a bottle cap or a corer. 

2. Put a pan onto the stove and add oil to the pan. Put it on medium heat and check the heat with a thermometer or a tooth pick. If the oil bubbles around the tooth pick, its ready for frying.

3. Pull your apple slices through your batter one by one and fry them 3 minutes on each side till they are golden. Put two pieces paper towel on a plate to let your fried apple slices cool down on it without them getting soggy.

4. Assemble

1. While we let the magic happen in the pan, we prep the sugar and cinnamon mixture.

2. In a bowl, mix your sugar and cinnamon together.

3. After cooling, swirl each side of your fried apple slices through the sugar mixture. 

4. Now fill your vanilla sauce into small dessert dishes and put the apple slices on top.

5. Enjoy!

Tips

  • Choose apples like granny smith or honeycrisp

  • Fry your apple slices slowly so they get caramelized and soft

  • Serve it warm
