Ingredients

​Yeast Activator & Dough

  • 200ml cold Water

  • 5 grams fresh Yeast

  • 1  Teaspoon Sugar

  • 450 grams All-purpose Flour

  • 1 Tablespoon Salt

Topping

  • 50 grams Pretzel Salt

Water bath

  • 300ml Water

  • Tablespoons Baking Soda

1. Yeast Activator and Dough

1. Add your water to a measuring cup. Now combine it with your yeast and sugar. Cover this mixture with a towel and let it sit for 15 minutes. 

2. In a bowl, add flour and salt. Now add your yeast mixture. Mix everything together until you get a rough dough.

3. Knead your dough until it becomes smooth for 10 minutes.

4. Now cover your bowl with a towel and let your dough rest for 2 hours. 

2. Form your dough

1. Now cut your dough into equal pieces. All the dough balls should weigh around 85 grams. Roll them into long shapes and form the typical pretzel shape. 

2. Put your pretzels on a tray and cover them with a towel. Let them rest for another hour.

2. Prepare and bake

1. Pour your water into a pot and add the baking soda. Put the pot on the stove and bring it to a boil an medium heat. 

3. Let your pretzel "swim" in the simmering water for 30 seconds. Make sure to turn each side of your bites halftime. 

4. Place your pretzel bites on a baking tray and top them off with the pretzel salt.

5. Bake for 20 minutes.

Tips

  • Use bread-flour for a chewier texture

  • Serve it fresh since it will harden if you keep them longer than a day

  • The pretzels are a good alternative to make a fancy sandwich
